Game Bird Stir Fry

This meal is quite pheasant, not grouse at all.

Ingredients

• 1 breast of pheasant, grouse or duck cut into small cubes

• 4 medium white mushrooms cut into small pieces

• ¼ cup minced onion

• 3 stems green onions sliced into small pieces

• 2 cloves crushed or minced garlic

• 2 tsp minced ginger root

• 1 egg beat with a fork

• 1 T canola oil or animal fat

• 2 cups cold cooked rice

• Soya sauce to taste

• 1 T sesame seeds

Instructions

  1. Cube the game bird breast and prepare veggies
  2. Mince ginger and crush garlic
  3. Heat oil in wok over medium high heat and add garlic and ginger to flavour the oil then add meat stirring until brown
  4. Add remaining ingredients, stirring until well incorporated
  5. Add cooked rice squeezing out any clumps with your hand and stir until rice is incorporated with other ingredients. At this point, add more oil if it’s needed as mushrooms and rice tend to suck up a lot of oil.
  6. Push the fried rice to one side of the wok then add the beaten egg and stir until it begins to scramble. Do not mix in with the rice until this happens or the eggs will simply coat the rice kernels.
  7. Once egg looks scrambled, stir into the rice for even distribution.
  8. Stir in soya sauce.
  9. Pour into serving dish and serve while hot.  Sprinkle on some sesame seeds if you wish
