There ain’t no paella like an Art paella. Or at least we’re sure you’ll think so after you try Art’s recipe for the classic Spanish meal.

INGREDIENTS

Paella Ingredients:

• 1 large onion

• 1 clove garlic

• 1 red pepper

• oil

• 2 chopped tomatoes

• Paella rice

• 6 large shrimp

• 2 chorizo sausages

• 1 cup duck or chicken cut into chunks

• 2 tsp. smoked paprika

• 1 packet saffron

• 1 L. of chicken stock

• 2 sprigs of rosemary

INSTRUCTIONS

Paella Instructions:

• Chop the veggies and fry for 6 minutes.

• Then add duck or chicken, chorizo and fry on med/high until caramelized.

• Add tomatoes.

• Add smoked paprika and stir.

• Add saffron and stir.

• Finally, add chicken stock, and then the rice. Stir then leave to boil until liquid is almost evaporated. Note: Do NOT stir after this.

• Add everything else and put a lid or some foil over the pan. Cook for a final 8 minutes, then allow paella to rest for 5 minutes before serving. Serve from pan.
