Stuffed Moose Heart

We appreciate a full heart, which is why we love Art’s stuffed moose heart recipe which uses stuffing galore. It’s guaranteed to keep you and your heart full.

INGREDIENTS

Stuffed Moose Heart Ingredients:

• 1 Moose heart (can be substituted with beef or bison heart)

 

For stuffing:

• 2 stalks celery, chopped

• ½ cup walnuts

• ¼ cup minced carrot

• ¼ cup dried cranberries

• 1 small onion, minced

• 1 small apple, cored and cubed

• 1 cup toasted bread crumbs

• ½ cup beef stock

• 2 T animal fat

• salt and pepper to taste

• 1 T butter

INSTRUCTIONS

Stuffed Moose Heart Ingredients:

• If your supermarket sells only pieces of beef heart, just buy a package then cut into thin lengthwise slices and fry in 1 T animal fat until both sides are nicely browned and blood has stopped surfacing on the meat.

• If you’re using whole heart make the stuffing then shove into the cleaned and washed cavity of the heart, smear outside of heart with fat or butter, then wrap generously with tin foil or place into covered casserole dish and bake at 360 degrees for roughly an hour to 70 minutes.

For the stuffing:

• Heat 1 T of the animal fat in heated skillet then add veggies and stir until golden brown. Add nuts and fruit and if mixture becomes dry, add butter and stir.

• Add breadcrumbs and stir, then pour in stock a bit at a time to get the right texture. The stuffing should bind slightly when pressed.

• Stuff into heart and bake as outlined above OR place stovetop stuffing over each individual slice of fried heart. Serve hot.
