Butter Seared Sturgeon Salad With Chilled Caviar

Sauce Gribiche Ingredients:
• 2 hard boiled eggs
• 4 egg yolks
• 2 tsp. (10 ml.) of Dijon mustard
• Juice of ½ a lemon OR ½ T. (7 ml.) of white wine vinegar
• ½ cup (125 ml.) of Canola oil
• ½ cup (125 ml.) of olive oil
• 3 pinches of salt
• ½ of a bunch of fresh flat leaf parsley (or chervil) roughly chopped
• ¼ cup (62 g.) of capers, drained and chopped
• ½ cup (125 g.) of cornichons (hambergur pickles can work in a pinch), drained and chopped
• ½ of a shallot, finely diced
Acidulated Chive Oil Ingredients:
• 1 handful of chives
• Juice of 1 lemon
• ½ cup (125 ml.) of extra virgin olive oil
• ½ cup (125 ml.) of Canola oil
• 1 big pinch of salt
Poached Laurette, Fingerling or Yukon Gold Ingredients:
• 8 potatoes be they laurette, fingerling or Yukon gold
• Salt
Butter Roasted Sturgeon Ingredients:
• 4 fillets of skin off sturgeon
• 1 T. (15 g.) of butter
• A splash of Canola oil
• 4 springs of thyme
• Salt
