Duck Tacos

Duck Taco Instructions:

Method:

• Mince onions, cut up pepper, crush and mince garlic and remove kernels from cob of corn.

• Slice breasts into fine cubes.

• Add duck oil to hot pan and stir, then add the vegetables. Fry until onions becomes translucent then add commercial taco powder or your own favourite home mix. Add cinnamon and stir until mixture browns.

• Add stock and allow to simmer and bubble thickens, stirring occasionally.

• Remove from heat and spread onto corn or flour tortillas and serve with cilantro, lime, sour cream and salsa or sweet fresh tomatoes.
