Ingredients
Tartar:
- 1 heaping Tbsp mayo
- 1 Tbsp relish
- 1 Tbsp capers (squeeze juice out first)
- 1 dill pickle minced
- 1 tsp garlic paste
Batter:
- 1 cup white flour
- ¾ cup rice flour
- 1 egg
- ½ cup of light beer
- ½ cup of vodka
- Salt & Pepper
Fish:
- 1 fillet Burbot (or cod)
- Canola oil
- Parsley
Instructions
- Add 1 heaping Tbsp of mayo, 1 Tbsp relish, and 1 Tbsp squeezed capers.
- Finely mince 1 dill pickle, and a small tsp of garlic paste. Mix.
- Add canola oil to a pot and slowly bring to medium heat.
- Add 1 cup of white flour to a bowl, and ¾ cup rice flour
- Whisk one egg.
- Add ½ cup of beer, and ½ cup of vodka, and add to batter mix.
- Add a few shakes of Salt & Pepper, whisk to get rid of clumps.
- Pat fish dry to get rid of moisture.
- Cut burbot into 3 pieces.
- Place the fish in the batter, cover fully, and place into the hot oil.
- Slowly place the fish into the oil. Flip until golden brown, then remove.
- Place on paper towel to absorb excess oil.
- Plate with fries, fish, side of your choice, and tartar. Garnish with parsley.
