Fish n’ Chips with Wild Burbot

Ingredients

Tartar:

  • 1 heaping Tbsp mayo
  • 1 Tbsp relish
  • 1 Tbsp capers (squeeze juice out first)
  • 1 dill pickle minced
  • 1 tsp garlic paste

 

Batter:

  • 1 cup white flour
  • ¾ cup rice flour
  • 1 egg
  • ½ cup of light beer
  • ½ cup of vodka
  • Salt & Pepper

 

Fish:

  • 1 fillet Burbot (or cod)
  • Canola oil
  • Parsley

Instructions

  1. Add 1 heaping Tbsp of mayo, 1 Tbsp relish, and 1 Tbsp squeezed capers.
  2. Finely mince 1 dill pickle, and a small tsp of garlic paste. Mix.
  3. Add canola oil to a pot and slowly bring to medium heat.
  4. Add 1 cup of white flour to a bowl, and ¾ cup rice flour
  5. Whisk one egg.
  6. Add ½ cup of beer, and ½ cup of vodka, and add to batter mix.
  7. Add a few shakes of Salt & Pepper, whisk to get rid of clumps.
  8. Pat fish dry to get rid of moisture.
  9. Cut burbot into 3 pieces.
  10. Place the fish in the batter, cover fully, and place into the hot oil. 
  11. Slowly place the fish into the oil. Flip until golden brown, then remove.
  12. Place on paper towel to absorb excess oil. 
  13. Plate with fries, fish, side of your choice, and tartar. Garnish with parsley.
