Ingredients
- Monk Fish fillet
- ½ Onion
- 1 Cup Cherry Tomatoes
- 2 tsp canola oil
- 2 cloves of garlic
- Curry sauce (korma)
- 1 tbsp butter
- Fresh Coriander

- Cooked rice
Instructions
- Slice one cup of cherry tomatoes in halves, and place in bowl.
- Chop one half of onion.
- Heat skillet to medium, add 2 tsp canola oil.
- Add onions to skillet.
- Crush 2 cloves of garlic and mince, set aside.
- Add tomatoes to skillet.
- Add garlic and korma curry sauce to skillet, and let simmer.
- Cut monk fish into chunks.
- Drizzle 1tbsp canola oil to new pan, and add fish. Cook for 2 mins.
- Add 1 tbsp butter to pan and cook for 1 minute.
- Add fish into the curry. Allow to reduce a few minutes.
- Add dollop of rice, and add fish curry on top. Garnish with sprigs of coriander.
