INGREDIENTS
Rock Cod Ingredients:
• 1 whole rock cod
• oil
• salt/pepper
• butter
Sauce
• ½ cup basil leaves
• 1 shallot chopped
• 1 tsp. sugar
• ¼ cup white wine vinegar
• 1 tsp. Dijon mustard
• ½ cup olive oil
INSTRUCTIONS
Rock Cod Instructions:
• Heat oil in wok and add rock cod which has been scored on both sides. Add butter.
• Fry fish turning after one side is golden brown and cook other side. Drizzle hot oil over fish from time to time.
• Put all sauce ingredients into a blender and mix into a sauce.
• Remove cooked cod, pour sauce over it and serve immediately.
